Recipe of Aaloo parantha boosted with sattu
Ingredients
1 tbs sattu powder
2 tbs Khapli wheat atta (khapli variety is an ancient variety of wheat which has low gluten)
1 medium Potato
A pinch of haldi (turmeric)
A pinch of amchoor (dry mango powder)
A pinch of non refined salt
2 tsps A2 ghee (A2 ghee is made from milk of the local breed of cows)
Cut n Steam the potatoes, then mash once cooled down (steaming retains nutrients)
Mix the haldi, amchoor and salt with the mashed potatoes.
Make a dough of the khapli wheat flour and stuff the potato mix into it. Roll these into round shapes. This recipe will make 2 paranthas.
Cook the paranthas on the iron skillet with some A2 ghee.
Once cooked, cut them into triangles and place it in your child’s tiffin.
Accompany with some salad/fruit/tofu and some yummy pickled gherkins from @bombucha.in Don’t forget the Mezmos :)
